Lets Celebrate!

Sunday is National Chocolate Cupcake Day.

Clearly a day that begs to be celebrated. In honor of this occasion (and the joyful celebration of a friend) I present to you:





Don't they look good?

You Need

1 pkg brownie mix (19 to 21 oz.)

1 8 oz. pkg cream cheese

1/3 C. sugar

1 egg

1/4 C. peanut butter

1/2 tsp. vanilla

1-1/2 C. cool whip

20 maraschino cherries.

Then You

Heat over to 350

Prepare brownie batter as directed on box. Spoon into 20 paper lined muffin cups.

Beat cream cheese, peanut butter, sugar, egg, and vanilla with mixer until blended. Spoon 1 round Tbsp. into each muffin cup, press down slightly. Bake 30 minutes or until set.

Top with Cool Whip and cherries. (This is what the recipe suggest, I'm planning to put chocolate frosting on mine. Because I thought they need just that little bit of extra chocolate.)

I haven't actually made them yet so I hope I didn't steer you wrong, but with brownie mix, peanut butter and cream cheese, it would be hard to mess this one up.
