I accidentally made the best chicken strips last night. I laid out chicken in the morning planning to make Crunchy Ranch Chicken Strips, Corn Flake and Ranch dressing encrusted chicken strips. Levi doesn't eat meat very well, but he loves chicken strips so I was hoping he would like these. I left the house looking forward to supper, confident that I had the ingredients to make it.
I get home from work to find that I don't have any of the ingredients to make this recipe. I'm a great planner, can you tell? Anyway, long story made even longer I cobbled something together that turned out to be easier then the recipe I had planned and very yummy. Levi even gobbled them up. Thought I'd share in case anyone else finds themselves with a pound of defrosted chicken and no plan.
I took a packet of ranch dressing mix and about a cup and a half of bread crumbs and mixed them together.
Cut the chicken into strips and dip them in milk and then in the crumb mix.
Put them in a greased 9x13 inch pan and bake for 20-25 min (the recipe said 15 min. but I get a little paranoid about chicken, don't want to poison anyone) at 425.
The breading was nice and crisp (I hate when it get soggy) and they were very ranchy.

sounds yummy! i never have ranch dressing mix tho. i need to make sure and get some to have on hand! thanks for the recipe.
yumm-o...thanks for sharing. I think I even have ranch dressing mix on hand (but no bread crumbs, although I'm betting I can make some).
