I'm In

I looked to my holiday calendar today to find inspiration for today's post and oh, did I find it. Not just inspiration for a post but inspiration for life. A reason to keep going this cold winter day. Why? you say. Today is CHOCOLATE CAKE DAY.

Well, I don't need to hear anymore, who cares if the origin for the day is unknown? Who cares if it's probably invented by bakers or chocolate makers? I'm in, I'm for any holiday that encourages the consumption of more chocolate. (By the way, the one problem with this picture for me is that strawberry. It's just sticking out taunting me with it's healthiness. I say dip that sucker in chocolate or get it off the plate.) So, I'm joining. At lunch today I am finding some version of chocolate cake, I don't care if it's a Swiss Roll, it will be on my plate. Please join me. Let's put Chocolate Cake Day on the map or the calendar, as it were. Because everyone needs a reason to celebrate when the temperature is 10, the skies are gray and flip flop weather is months away.

in honor of choc cake day, i present the most dangerous choc cake recipe in the world--dangerous b/c it only takes 5 minutes to make. i got it in an email yesterday at school and haven't made it but i might this week b/c we will probably be off all week . . . without further ado 5 MINUTE CHOCOLATE MUG CAKE''

1 Coffee Mug
4 tablespoons flour(that's plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional) some nuts (optional)
Small splash of vanilla

Add dry ingredients to mug, and mix well .

Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.
Put your mug in the microwave and cook for 3 minutes on high.
The cake will rise over the top of the mug, but don't be alarmed!

Allow to cool a little, and tip out onto a plate if desired. EAT!

what a great day to celebrate. I told Trenton that we were having chocolate cake last night in honor of the holiday and he didn't believe me. He thought I just made it up so I'd have an excuse to eat chocolate cake.....men...
